Choereg (armenian Easter Bread) Recipe

Ingredients
  • 1 c unsalted butter
  • 2 (.25 oz) envelopes active dry yeast
  • 1 c whole milk
  • 1 1/2 tsps baking powder
  • 1/2 c lukewarm water
  • 2 tsps white sugar
  • 6 c all-purpose flour, or as needed
  • 1 egg, beaten
  • 5 eggs
  • 1 c margarine
  • 1 1/2 tsps salt
  • 1 1/2 tbsps ground mahleb
  • 1 c white sugar
  • 1 tbsp sesame seeds

Directions
  • Step #1 In a saucepan over med-heat/flame, mix the milk, butter & margarine.
  • Step #2 Heat until butter & margarine are melted, but do not let it boil.
  • Step #3 Stir in 1 c of sugar until dissolved, then set aside to cool to lukewarm.
  • Step #4 Meanwhile, in a small bowl, dissolve 2 tsps of sugar in warm water.
  • Step #5 Sprinkle top the yeast over the surface, & let this stand until frothy, about 10 mins.
  • Step #6 Crack the eggs into a large bowl, & stir a little to break up the yolks.
  • Step #7 Slowly pour in the heated milk mixture while whisking constantly, so as to temper the eggs & not cook them.
  • Step #8 Add the yeast mixture, & stir just until mixed.
  • Step #9 In a large bowl, mix the flour, mahleb, baking powder, & salt.
  • Step #10 Make a well in the center, & pour in the wet mixture.
  • Step #11 Stir until it forms a sticky dough.
  • Step #12 Pour onto a floured surface, & knead in extra flour as needed to make a more substantial dough.
  • Step #13 Knead for about 10 mins.
  • Step #14 Place in an oiled bowl, & set in a warm place to rise for about 2 hrs, or until doubled in size.
  • Step #15 When the dough has doubled, punch down again, & let rise until doubled.
  • Step #16 It will only take about half as long this time.
  • Step #17 Separate the dough into 5 even portions, then separate each of those into thirds.
  • Step #18 Roll each of those into ropes about 12 inches long.
  • Step #19 Braid sets of three ropes together, pinching the ends to seal, & tucking them under for a better presentation.
  • Step #20 Place the loaves onto baking sheets lined with parchment paper.
  • Step #21 Loaves should be spaced 4 inches apart.
  • Step #22 Set in a warm place to rise until your finger leaves an impression behind when you poke the loaf carefully.
  • Step #23 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #24 Brush the loaves with beaten egg, & sprinkle with sesame seeds.
  • Step #25 Bake for 25 mins in the preheated oven, or until nicely golden brown all over.
