White Bean Dip With Herbs Recipe

Ingredients
  •  Cayenne pepper
  • 1 tsp finely sliced sage
  •  Salt
  • 1/4 c plus 2 tbsps extra-virgin olive oil
  • 1/2 tsp finely sliced rosemary
  •  Two 19-oz cans cannellini beans, drained
  • 2 tbsps water
  •  Pita chips, for serving
  • 3 garlic cloves, very finely sliced

Directions
  • Step #1 In a medium skillet, heat 1/4 c of the olive oil until shimmering.
  • Step #2 Add the garlic, stirring, sage & rosemary & cook over moderately high heat, until fragrant & the garlic is just beginning to brown, about 1 min.
  • Step #3 Add the beans & toss to coat.
  • Step #4 Transfer the cannellini beans to a food processor/blender.
  • Step #5 Add the water, season this with salt & cayenne & process to a fairly smooth puree.
  • Step #6 Transfer the dip to a small serving bowl, drizzle the remaining 2 tbsps of olive oil on top & serve this with pita chips.
