Caramelized Black Bean "butter" Recipe

Ingredients
  • 1 tbsp olive oil
  • 4 c sliced onion
  • 1 tbsp sliced fresh parsley
  • 2 tsps unsweetened cocoa
  • 2 (15-oz) cans black beans, rinsed & drained
  • 1/2 tsp salt
  • 1 tbsp balsamic vinegar
  • 1/2 tsp paprika

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add onion; sauté 10 mins or until golden.
  • Step #3 Place onion, salt, cocoa, vinegar, beans, & paprika in a food processor/blender; process until smooth.
  • Step #4 Place bean mixture in a bowl.
  • Step #5 Sprinkle top with parsley.
