1 medium halved peeled avocado, seeded & cut into 1/2-inch chunks
1/2 red pepper, sliced
4 minced green onions
4 c field greens
1 peeled navel orange, cut into sections
1/3 c extra-virgin olive oil
1/3 c orange juice
2 tbsps honey
Directions
Step #1 Combine first 4 ingredients (through honey) in a food processor/blender or mixer, or use a handheld immersion mixer, & process for 1 min until the mixture is smooth & creamy.
Step #2 Combine the remaining ingredients (except the greens) In a large-ish, nonreactive bowl (glass, stainless steel, or glazed ceramic).
Step #3 Toss with half of the dressing to moisten.
