Endive Stuffed With Goat Cheese And Walnuts Recipe

Ingredients
  • 1/4 c balsamic vinegar
  • 1/3 c coarsely sliced walnuts
  • 1/4 tsp cracked black pepper
  • 1/3 c (1 1/2 oz) crumbled goat cheese or blue cheese
  • 16 small orange sections (about 2 navel oranges)
  • 1 tbsp minced fresh chives
  • 3 tbsps orange juice
  • 16 Belgian endive leaves (about 2 heads)
  • 2 tbsps honey, divided
  •  Cooking spray

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine walnuts & 1 tbsp honey; spread on a baking sheet coated with cooking spray.
  • Step #3 Bake at 350° for 10 mins, stirring after 5 mins.
  • Step #4 Combine 1 tbsp honey, vinegar, & orange juice in a small saucepan.
  • Step #5 Bring mixture to a boil over high heat, & cook this until reduced to 3 tbsps (about 5 mins).
  • Step #6 Fill each endive leaf with 1 orange section.
  • Step #7 Top each section with 1 tsp cheese & 1 tsp walnuts; arrange on a plate.
  • Step #8 Drizzle the vinegar mixture evenly over leaves, & sprinkle evenly with chives & pepper.
