Coconut Fried Shrimp Recipe

Ingredients
  • 1 tbsp sugar
  • 3/4 c biscuit mix
  •  Orange-Lime Dip
  • 1 lb unpeeled, medium-size fresh shrimp
  • 3/4 c beer
  • 3/4 c all-purpose flour
  • 2 1/2 c flaked coconut
  •  Vegetable oil

Directions
  • Step #1 Peel shrimp, if desired, leaving the tails intact; devein, & set shrimp aside.
  • Step #2 Combine biscuit mix, & beer, sugar, stirring until smooth; set mixture aside.
  • Step #3 Coat shrimp with flour; dip into beer mixture, allowing excess to drain.
  • Step #4 Gently roll coated shrimp in flaked coconut.
  • Step #5 Pour vegetable oil to a depth of 3 inches In a large-ish saucepan; heat to 350°.
  • Step #6 Cook shrimp, a few at a time, 1 to 2 mins or until golden; drain on paper towels, & serve as soon as possible with Orange-Lime Dip.
