Poached Salmon Recipe

Ingredients
  • 3 celery ribs with leaves, cut into 1-inch pieces
  • 1 tsp salt
  • 1 (8-lb) salmon, dressed
  • 10 black peppercorns
  • 3 (8-oz) bottles clam juice
  • 2 medium onions, quartered
  • 6 parsley sprigs
  •  Aïoli
  • 2 carrots, cut into 1-inch pieces
  •  Watercress Sauce
  • 2 c dry white wine
  •  Cucumber Dill Sauce
  • 2 bay leaves
  • 3 c water
  •  Garnishes: Cucumber slices, lemon slices, & sprigs of fresh dill

Directions
  • Step #1 Combine first 10 ingredients in a fish poacher.
  • Step #2 * Bring to a boil.
  • Step #3 Cover up, reduce heat, & let simmer 30 mins.
  • Step #4 Cool to about room temp; strain reserving liquid.
  • Step #5 Discard solids.
  • Step #6 Return liquid to poacher.
  • Step #7 Remove the head, tail, & fins from salmon.
  • Step #8 Wrap fish in cheesecloth; tie ends with string.
  • Step #9 Place fish in poaching liquid; add water to cover by 1 to 1 1/2 inches.
  • Step #10 Cover up & bring to a simmer; simmer 20 mins.
  • Step #11 Remove from heat, leaving fish in liquid for 15 mins.
  • Step #12 Remove fish from liquid.
  • Step #13 Cool.
  • Step #14 Cover up & put in the fridge for 8 hrs.
  • Step #15 Remove cheesecloth.
  • Step #16 Remove & discard skin.
  • Step #17 Place fish on a platter, & garnish with cucumber slices, lemon slices, & fresh dill.
  • Step #18 Serve with Cucumber-Dill Sauce, Watercress Sauce, & Aïoli.
  • Step #19 *A large oval roasting pan may be used.
