Artichoke-and-red Pepper Pizza Recipe

Ingredients
  • 1 1/2 c (6 oz) shredded part-skim mozzarella cheese
  • 1 (10-oz) can put in the fridged pizza dough
  • 1 (14-oz) can artichoke hearts, drained & coarsely sliced
  • 1 tsp dried basil
  •  Vegetable cooking spray
  • 1 c julienne-cut red bell pepper
  • 1 tbsp olive oil
  • 1 (2.5-oz) jar sliced mushrooms, drained
  •  Cracked pepper (optional)
  • 5 garlic cloves, minced
  • 1 tsp dried oregano

Directions
  • Step #1 Unroll pizza dough onto a baking sheet coated with cooking spray; pat dough into a 14 x 10-inch rectangle.
  • Step #2 Bake at 425° for 5 mins; set aside.
  • Step #3 Heat oil in a nonstick skillet over medium-high heat.
  • Step #4 Add red bell pepper, basil, oregano, & garlic; saute 5 mins.
  • Step #5 Remove from heat; stir in the artichokes & mushrooms.
  • Step #6 Sprinkle top half of cheese over prepared pizza crust, leaving a 1/2-inch border.
  • Step #7 Spread the vegetable mixture evenly over cheese, & top this with remaining cheese.
  • Step #8 Sprinkle top with cracked pepper, if desired.
  • Step #9 Bake at 425° for 10 mins or until crust is lightly browned.
