Aged Cheddar With Apple Wedges And Cider Reduction Recipe

Ingredients
  • 2 c apple cider
  • 1/2 lb Shelburne Farms or other aged cheddar cheese, thinly sliced
  • 2 Granny Smith apples, cored & each cut into 16 slices
  • 2 tsps chilled butter
  • 8 (1-oz) slices walnut or other nut bread, toasted & halved

Directions
  • Step #1 Bring cider to a boil In a large-ish saucepan; cook this until reduced to 1/2 c (about 15 mins).
  • Step #2 Remove from heat.
  • Step #3 Add butter; stir with a whisk until butter melts.
  • Step #4 Place 2 bread halves on each of 8 dessert plates.
  • Step #5 Divide cheese evenly among bread halves.
  • Step #6 Place 2 apple slices on each bread half.
  • Step #7 Drizzle 1 tbsp cider reduction around each serving.
