Step #1 Bring 6 c water to a boil; add shrimp, & cook 3 to 5 mins or just until shrimp turn pink.
Step #2 Drain & rinse with cold water; peel shrimp, & devein, if desired, leaving tails intact.
Step #3 Bring 1 c water & wine to a boil in a Dutch oven.
Step #4 Add mussels; cover & return to a boil.
Step #5 Boil 4 to 5 mins.
Step #6 Immediately remove open mussels with a slotted spoon.
Step #7 Continue cooking remaining mussels 2 to 3 mins; others may open.
Step #8 Discard any still-unopened mussels.
Step #9 Stack 3 graduated trays or pizza pans & 2 graduated cake pedestals, using the largest tray as a base & ending with the smallest; secure trays with floral clay.
