Beef-stuffed Mushrooms Recipe

Ingredients
  • 3/4 tsp pepper
  • 1 (14 1/2-oz) can chicken broth
  • 3/4 tsp chili powder
  • 1/4 c fine, dry breadcrumbs
  • 1 1/4 c finely sliced cooked roast beef
  • 1 garlic clove, minced
  • 2 tbsps butter or margarine
  •  Garnish: sliced fresh parsley
  • 1/2 tsp salt
  • 2 large shallots, minced
  • 1 (24-oz) package large mushrooms (about 2 dozen)
  • 1/2 tsp anchovy paste

Directions
  • Step #1 Remove stems from mushrooms; chop stems.
  • Step #2 Set mushroom caps aside.
  • Step #3 Melt butter In a large-ish skillet over medium-high heat; add shallots & garlic, & sauté 2 to 3 mins.
  • Step #4 Add mushroom stems, & sauté 4 mins or until tender.
  • Step #5 Remove from heat; stir in the roast beef & next 4 ingredients.
  • Step #6 Bring broth to a boil in a Dutch oven; reduce heat.
  • Step #7 Add mushroom caps in batches, & let simmer each batch 3 mins.
  • Step #8 Drain well.
  • Step #9 Spoon beef mixture evenly into caps.
  • Step #10 Sprinkle top with breadcrumbs, & place on a lightly greased rack in a broiler pan.
  • Step #11 Broil stuffed mushrooms 5 1/2 inches from heat for 3 mins.
  • Step #12 Garnish, if desired.
