Cowpea Chow Chow Recipe

Ingredients
  • 2 c sliced seeded tomato
  • 1/4 c sliced fresh cilantro
  • 1/2 tsp salt
  • 1 c sliced green bell pepper
  • 1 (15-oz) can black-eyed peas, drained
  • 1 c sliced red bell pepper
  • 1/4 tsp pepper
  • 3 tbsps fresh lime juice
  • 2 tsps finely sliced seeded serrano chile
  • 1 c sliced onion
  • 2 tbsps white vinegar

Directions
  • Step #1 Combine all ingredients In a large-ish bowl, & stir well.
  • Step #2 Cover up & chill at least 1 hr.
