Goat Cheese Spread Recipe

Ingredients
  • 2 garlic cloves, minced
  • 1/2 c dried tomatoes in oil, drained & sliced
  •  French bread slices or crackers
  • 2 (8-oz) packages cream cheese, softened
  • 4 tsps sliced fresh or 1 1/4 tsps dried oregano
  • 1/4 c basil pesto
  • 1/8 tsp freshly ground pepper
  • 8 oz goat cheese
  •  Garnishes: dried tomato slivers, fresh oregano sprigs

Directions
  • Step #1 Process first 5 ingredients in a food processor/blender until smooth.
  • Step #2 Spread one-third of cheese mixture in bottom of a plastic wrap-lined 8- x 4-inch loafpan.
  • Step #3 Top with pesto; spread one-third cheese mixture over pesto.
  • Step #4 Sprinkle top with dried tomatoes; top this with remaining cheese mixture.
  • Step #5 Cover up & chill 8 hrs.
  • Step #6 Invert spread onto a serving plate, discarding plastic wrap.
  • Step #7 Garnish, if desired.
  • Step #8 Serve with French bread slices or crackers.
