Green Chile-pimiento Cheese Recipe

Ingredients
  • 2 (8-oz) blocks extra sharp Cheddar cheese, shredded
  • 1 (4-oz) jar sliced pimiento, drained
  • 1 (8-oz) block Monterey Jack cheese with peppers, shredded
  • 1 (4.5-oz) can sliced green chiles
  • 1/4 small sweet onion, minced
  • 1 medium poblano chile pepper, seeded & minced
  • 1 c mayonnaise
  • 2 tsps Worcestershire sauce

Directions
  • Step #1 Stir together all ingredients In a large-ish bowl.
  • Step #2 Note: Spread 1/2 c cheese mixture on 6 to 8 whole grain bread slices; top this with bread slices.
  • Step #3 Trim crusts, & cut sandwiches lengthwise into thirds.
  • Step #4 Reserve remaining cheese for other uses.
