Smoked Bluefish Pâté Recipe

Ingredients
  • 2 tbsps capers
  • 1/8 tsp freshly ground pepper
  • 2 (8-oz) packages cream cheese, softened
  • 1 1/2 lbs smoked bluefish fillets, skinned
  •  Garnish: lemon wedges, fresh dill sprigs
  • 3 tbsps lemon juice
  • 1 medium-size purple onion, minced
  • 1/2 c minced fresh dill
  • 2 1/2 tbsps cognac

Directions
  • Step #1 Remove & discard dark meat from fish fillets.
  • Step #2 Flake white meat, & set aside.
  • Step #3 Beat cream cheese at medium speed with electric mixer until fluffy.
  • Step #4 Add lemon juice, cognac, & pepper; beat until thoroughly mixed.
  • Step #5 Stir in fish, onion, dill, & capers.
  • Step #6 Pack into 1-quart crock or bowl; cover & chill two hrs.
  • Step #7 Let stand at about room temp 15 to 30 mins to soften; serve this with crackers or crostini.
  • Step #8 Garnish, if desired.
