Sweet Corn Soup With Crab Recipe

Ingredients
  • 1/4 tsp ground white pepper
  •  Garnish: fresh cilantro sprigs
  • 1 jalapeño pepper, sliced
  • 1/2 tsp salt
  • 1/3 c sliced salt pork
  • 2 celery ribs, sliced
  • 1 medium onion, sliced
  • 1/4 c white cornmeal
  • 2 tbsps butter or margarine
  • 2 corncobs
  • 1 red bell pepper, sliced
  • 4 3/4 c chicken broth
  • 1 c whipping cream
  • 1 lb fresh lump crabmeat, drained
  • 1/4 c sliced fresh cilantro
  • 3 c fresh sweet corn kernels (about 6 ears)

Directions
  • Step #1 Brown salt pork in a Dutch oven over med-heat/flame; remove pork, & reserve for another use.
  • Step #2 Add butter to pork drippings in Dutch oven over med-heat/flame; whisk in cornmeal, & cook, whisking constantly, 1 min.
  • Step #3 Add celery & next 4 ingredients; saute 2 mins.
  • Step #4 Add broth & corncobs.
  • Step #5 Bring to a boil; reduce heat, & let simmer 30 mins.
  • Step #6 Remove & discard corncobs.
  • Step #7 Stir in crabmeat & next 4 ingredients; cook this until thoroughly heated.
  • Step #8 Garnish, if desired.
  • Step #9 Prep: 25 min.
  • Step #10 , Cook: 45 min.
