Seafood Salad Recipe

Ingredients
  • 3 tbsps minced shallots or green onions
  • 3 tbsps fresh lime juice
  • 1 lb medium shrimp, peeled & deveined
  • 1/4 c minced fresh cilantro
  • 6 c gourmet salad greens
  • 1 1/2 c sliced seeded tomato (about 1 lb)
  • 1 tbsp minced seeded jalapeño pepper
  • 1/2 lb lump crabmeat, shell pieces removed
  • 1/2 lb sea scallops

Directions
  • Step #1 Steam shrimp & scallops, covered, 6 mins or until done; cool.
  • Step #2 Cut the shrimp & scallops into quarters.
  • Step #3 Combine shrimp, scallops, crabmeat, & next 5 ingredients (crab through jalapeño) in a bowl.
  • Step #4 Serve over salad greens.
