Bacon-wrapped Almond-stuffed Apricots Recipe

Ingredients
  • 24 dried apricot halves
  • 8 bacon slices, cut into thirds
  • 1/8 tsp pepper
  • 24 whole almonds, lightly toasted
  • 3/4 c apricot preserves
  • 2 tbsps soy sauce

Directions
  • Step #1 Fold each apricot half around 1 whole almond.
  • Step #2 Wrap 1 bacon piece around each stuffed apricot.
  • Step #3 Secure with wooden picks.
  • Step #4 Place on a wire rack in an aluminum foil wrap-lined jelly-roll pan.
  • Step #5 Bake at 375° for 20 to 25 mins or until bacon is crisp, turning once.
  • Step #6 Microwave preserves, soy sauce, & pepper in a small microwave-safe bowl at MEDIUM 1 min or until preserves are melted.
  • Step #7 Serve dipping sauce with stuffed apricots.
