Spicy Shrimp And Scallop Seviche Recipe

Ingredients
  • 2 c sliced onion
  • 1/2 lb bay scallops
  • 1/2 c sliced fresh cilantro
  • 1 (16-oz) bottle no salt-added tomato juice
  • 2 tbsps sliced serrano chile
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 lb medium shrimp, peeled & deveined
  • 1/2 c fresh lime juice
  • 3 c sliced tomato

Directions
  • Step #1 Combine first 7 ingredients In a large-ish bowl; let this stand 30 mins.
  • Step #2 Cook shrimp & scallops in boiling water 45 seconds.
  • Step #3 Drain & plunge shrimp & scallops into ice water; drain.
  • Step #4 Add shrimp & scallops to tomato mixture.
  • Step #5 Stir in tomato juice.
  • Step #6 Cover up & chill 2 hrs.
