Tomato-caper Bruschetta Recipe

Ingredients
  •  Salt
  • 1 tbsp drained capers
  • 1 tbsp balsamic vinegar
  • 1 1/2 tbsps lemon juice
  • 1 baguette (1/2 lb.)
  • 1 tbsp fresh oregano leaves or 1 tsp dried oregano
  • 1 clove garlic
  • 1 c (about 2 oz.) firmly packed dried tomato slices
  • 1 green onion (including green top), ends trimmed, & coarsely sliced

Directions
  • Step #1 In a small bowl, mix tomatoes with 1 c boiling water; let this stand until soft & pliable, about 15 mins.
  • Step #2 Drain tomatoes.
  • Step #3 Meanwhile, cut baguette diagonally into 24 slices.
  • Step #4 Arrange on a 12- by 15-inch baking sheet.
  • Step #5 Broil 4 to 6 inches from heat until toasted on each side, about 2 mins total.
  • Step #6 In a food processor/blender, garlic, finely mince tomatoes, onion, capers, & oregano with lemon juice & balsamic vinegar.
  • Step #7 (Or with a knife, mince tomatoes, & oregano, garlic, capers, onion, then add lemon juice & vinegar.
  • Step #8 ) Add salt to taste.
  • Step #9 Spoon tomato mixture into a small bowl & accompany with toast.
  • Step #10 Spread tomato mixture onto toast to eat.
  • Step #11 Nutritional analysis per piece.
