Bacon-stuffed Eggs Recipe

Ingredients
  • 1/4 c sliced fresh chives
  • 1/2 c instant potato flakes
  • 2/3 c (8 slices) bacon, crumbled
  • 1/4 tsp salt
  • 3/4 c light mayonnaise
  • 1 tbsp Dijon mustard
  • 1 dozen cooked eggs
  •  Garnish: fresh dill sprigs
  • 1/4 tsp pepper
  • 3 tbsps pickle relish

Directions
  • Step #1 Cut eggs in half lengthwise.
  • Step #2 Remove yolks.
  • Step #3 Process yolks, mayonnaise, & next 4 ingredients in a food processor/blender until smooth, stopping to scrape down sides.
  • Step #4 Stir in crumbled bacon, pickle relish & chop chives into mixture.
  • Step #5 Spoon filling into egg whites.
  • Step #6 Cover up & chill up to 8 hrs.
  • Step #7 Garnish, if desired.
