Cream Of Ginger Carrot Soup Recipe

Ingredients
  • 2 tbsps white sugar
  • 1/2 c ginger liqueur
  • 2 c skim milk
  • 1/2 c water
  • 1/2 c sliced onion
  • 2 c thinly sliced carrots
  • 3 cubes chicken bouillon
  • salt to taste
  • 3 tbsps sliced fresh parsley
  • 2 tbsps all-purpose flour
  • ground black pepper to taste
  • 1/4 tsp ground ginger
  • 4 tbsps margarine

Directions
  • Step #1 Simmer carrots, water, chicken bouillon cubes, 1/4 c liqueur, onions, & butter or margarine until carrots are tender.
  • Step #2 Cool slightly.
  • Step #3 Puree carrot mixture in a mixer or food processor/blender.
  • Step #4 Add milk, sugar, flour, & ground ginger.
  • Step #5 Return carrot puree to pot.
  • Step #6 Simmer until thickened, stirring every once in awhile.
  • Step #7 Stir in remaining 1/4 c liqueur.
  • Step #8 Add extra milk for consistency you like.
  • Step #9 Spice up with salt & pepper to taste.
  • Step #10 Serve in warmed soup bowls, & garnish with fresh sliced parsley.
