Greek Shrimp Bruschetta Recipe

Ingredients
  • 1 French baguette, cut diagonally into 1/4 inch-thick slices
  • 1/3 c olive oil, divided
  • 1 1/2 tbsps minced garlic
  • 2 tsps minced fresh thyme
  • 1/2 c crumbled feta cheese
  • 1/4 c finely sliced parsley
  • 3/4 lb small fresh shrimp, peeled & deveined
  • 1 tsp Greek seasoning
  • 1/2 c sliced green onion
  • 1 tbsp fresh lemon juice
  • 2 large plum tomatoes, seeded & finely sliced

Directions
  • Step #1 Heat 1 tbsp oil In a large-ish skillet over medium-high heat.
  • Step #2 Sauté shrimp & garlic 3 to 4 mins until shrimp are cooked.
  • Step #3 Transfer to a small bowl & chill in the fridge.
  • Step #4 Combine tomatoes, 1 tbsp olive oil & next 6 ingredients In a large-ish bowl; stir in the shrimp.
  • Step #5 Refrigerate until ready to serve.
  • Step #6 Place bread slices on a baking sheet; brush bread with remaining olive oil.
  • Step #7 Bake at 375º for 8 mins.
  • Step #8 Spoon 1 heaping tbsp shrimp mixture onto each bread slice.
