Crispy Coconut Chicken Dippers With Wowee Maui Mustard Recipe

Ingredients
  •  Garnish: lime wedges
  • 1 tsp salt
  •  Wowee Maui Mustard
  • 1 tsp ground ginger
  •  Salt (optional)
  • 1/2 tsp pepper
  • 1 c all-purpose flour
  • 4 boneless, skinless chicken breasts
  •  vegetable oil
  • 1 c fine, dry breadcrumbs
  • 2 c sweetened flaked coconut
  • 3/4 c lime-flavored seltzer water

Directions
  • Step #1 Cut each chicken breast into 4 to 6 (1-inch) strips.
  • Step #2 Whisk together flour & next 4 ingredients in a bowl.
  • Step #3 Combine coconut & breadcrumbs In a large-ish shallow dish.
  • Step #4 Dip chicken pieces in flour mixture, & dredge in coconut mixture.
  • Step #5 Pour oil to a depth of 2 inches in a deep skillet or Dutch oven; heat to 350°.
  • Step #6 Fry chicken, in batches, 2 to 3 mins or until golden.
  • Step #7 Drain on paper towels.
  • Step #8 Sprinkle top lightly with salt, if desired.
  • Step #9 Serve with Wowee Maui Mustard.
  • Step #10 Garnish, if desired.
