Shrimp In Garlic Sauce Recipe

Ingredients
  • 1/4 tsp dried red-pepper flakes
  • 1 1/4 tsps salt
  • 2 lbs large shrimp, shelled
  • 4 cloves garlic, cut into thin slices
  • 2 tbsps lemon juice
  • 1 bay leaf
  • 3 tbsps sliced fresh parsley
  • 1/3 c olive oil
  • 1/4 tsp fresh-ground black pepper
  • 3 tbsps dry sherry

Directions
  • Step #1 In a large frying pan, heat the oil over moderate heat.
  • Step #2 Add the garlic, & red-pepper flakes & cook for 3 mins, bay leaf, stirring every once in awhile.
  • Step #3 Add the shrimp, salt, & black pepper to the pan & stir this to mix.
  • Step #4 Cook, until the shrimp are just done, stirring every once in awhile, 4 to 5 mins.
  • Step #5 Stir in the sherry, lemon juice, & parsley.
  • Step #6 Fish Alternatives: Squid would be delicious with the garlic sauce.
  • Step #7 Cook it quickly (for about two mins), or it will become tough & rubbery.
  • Step #8 Sea scallops are another alternative; cook them for about two mins per side, without stirring, so they brown nicely.
  • Step #9 Deveining Shrimp Dark shrimp veins are usually removed for aesthetic purposes.
  • Step #10 We find that it's not essential to take them out, especially if you're pressed for time.
  • Step #11 Wine Recommendation: Bold Mediterranean flavors welcome an easygoing wine such as a dry rosé from Spain or the south of France.
  • Step #12 If you prefer a wine with a bit more sweetness, try a white zinfandel from California.
