Blue Cheese-and-bacon Puffs Recipe

Ingredients
  • 1 1/2 c all-purpose flour
  • 1 1/2 c water
  • 1/2 c butter or margarine
  • 1/4 tsp ground red pepper
  • 8 bacon slices, cooked & crumbled
  • 8 oz crumbled blue cheese
  • 1/4 tsp ground black pepper
  • 6 large eggs
  • 4 green onions, finely sliced
  • 1/2 tsp salt

Directions
  • Step #1 Bring 11/2 c water & butter to a boil in a heavy saucepan over med-heat/flame.
  • Step #2 Add flour & next 3 ingredients; cook, beating with a wooden spoon, until mixture leaves sides of pan & forms a smooth ball of dough.
  • Step #3 Remove from heat, & cool 5 mins.
  • Step #4 Add eggs, 1 at a time, beating well with spoon after each addition.
  • Step #5 Beat in cheese, bacon, & sliced green onions.
  • Step #6 Drop dough by rounded tspfuls 2 inches apart onto lightly greased baking sheets.
  • Step #7 Bake at 400° for 20 to 25 mins or until golden.
  • Step #8 (Puffs will be moist in center.
  • Step #9 ) Serve puffs warm or at about room temp.
  • Step #10 Note: Puffs may be frozen up to 3 months.
  • Step #11 Thaw in refrigerator overnight, & reheat at 350° for 5 mins or until thoroughly heated.
