Grilled Shrimp With Tropical Fruit Sauce Recipe

Ingredients
  • 1/4 c fresh lime juice, divided
  •  Hot cooked rice
  •  Garnishes: lime slices, green onions
  • 1/2 to 1 tsp chili-garlic paste
  • 2 papayas or mangoes, peeled & cubed*
  • 1/4 c minced fresh cilantro
  • 1/2 tsp salt
  • 4 plum tomatoes, seeded & sliced
  • 2 tbsps dark sesame oil
  • 1 (33.8-oz) jar peach nectar
  • 2 lbs unpeeled, large fresh shrimp
  • 3 green onions, sliced
  • 1 tbsp grated fresh ginger

Directions
  • Step #1 Peel shrimp, & devein, if desired; set aside.
  • Step #2 Bring nectar to a boil in a medium saucepan; boil 45 mins or until reduced to 1 c.
  • Step #3 Stir in 2 tbsps lime juice & next 3 ingredients.
  • Step #4 Remove from heat, & cool.
  • Step #5 Pour half of nectar mixture In a large-ish shallow dish or heavy-duty zip-top plastic bag; add shrimp.
  • Step #6 Cover up or seal, & chill 1 hr.
  • Step #7 Remove shrimp from marinade, discarding marinade.
  • Step #8 Grill, in 2 batches, in a grill basket over medium-high heat (350° to 400°) 3 to 4 mins or until shrimp turn pink.
  • Step #9 Add remaining 2 tbsps lime juice, tomato, & next 4 ingredients to remaining nectar mixture.
  • Step #10 Cook over med-heat/flame until thoroughly heated.
  • Step #11 Stir in shrimp; serve over rice.
  • Step #12 Garnish, if desired.
  • Step #13 *1 pineapple, sliced, may be substituted for papaya.
  • Step #14 NOTE: Select unblemished papayes or mangoes that yield slightly to pressure.
  • Step #15 If underripe, place this in a paper bag at about room temp to speed up the process.
