Dilly Rolls Recipe

Ingredients
  • 2 (.25 oz) packages active dry yeast
  • 2 c small curd cottage cheese
  • 1/2 tsp baking soda
  • 2 tbsps butter or margarine
  • 2 tbsps dried minced onion
  • 1/2 c warm water (110 degrees F to 115 degrees F)
  • 2 eggs
  • 4 1/2 c all-purpose flour
  • 1/4 c sugar
  • 1 tbsp salt
  • 1 tbsp dill weed

Directions
  • Step #1 In a large saucepan over med-heat/flame, cook cottage cheese & butter until butter is melted.
  • Step #2 Cool to 110 degrees F to 115 degrees F.
  • Step #3 In a large mixing bowl, dissolve yeast in water.
  • Step #4 Add eggs, sugar, onion, salt, dill, baking soda & cottage cheese mixture.
  • Step #5 Add 3 c of flour; beat until smooth.
  • Step #6 Add enough remaining flour to form a soft dough.
  • Step #7 Turn onto a floured surface; knead until smooth & elastic, about 6-8 mins.
  • Step #8 Place in a greased bowl, turning once to grease top.
  • Step #9 Cover & let rise in a warm place until doubled, about 1 hr.
  • Step #10 Punch dough down.
  • Step #11 Form into 24 balls; place this in a greased 13-in.
  • Step #12 x 9-in.
  • Step #13 x 2-in.
  • Step #14 baking pan that has been sprayed with nonstick cooking spray.
  • Step #15 Cover & let rise until doubled, about 45 mins.
  • Step #16 Bake at 350 degrees F for 20-25 mins.
