Chicken-artichoke Spread Recipe

Ingredients
  • 1/2 c minced green onions
  • 2 tbsps light mayonnaise
  •  Cooking spray
  • 1 (14-oz) can artichoke hearts, drained
  • 2 tsps Worcestershire sauce
  • 3 small garlic cloves, minced
  • 1/4 c grated fresh Parmesan cheese
  • 1 c plain low-fat yogurt
  • 2 (4-oz) skinned, boned chicken breast halves
  • 1/8 tsp paprika
  • 3 drops hot sauce

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Place artichoke hearts in food processor/blender, & process until finely sliced.
  • Step #3 Spoon into a bowl, & set aside.
  • Step #4 Place a large nonstick skillet coated with cooking spray over medium-high heat until hot.
  • Step #5 Add chicken, & cook 4 mins on each side or until chicken is done.
  • Step #6 Remove chicken from skillet, & let cool.
  • Step #7 Cut chicken into 1-inch pieces, & set aside.
  • Step #8 Recoat skillet with cooking spray, & add onions & garlic.
  • Step #9 Sauté 2 mins or until tender.
  • Step #10 Place chicken & onion mixture in food processor/blender; process until finely ground.
  • Step #11 Add yogurt, mayonnaise, cheese, & sauces, & pulse until well-mixed.
  • Step #12 Add chicken mixture to artichokes; stir well.
  • Step #13 Spoon mixture into a 1-quart baking dish coated with cooking spray, & sprinkle with paprika.
  • Step #14 Bake mixture at 350° for 25 mins or until heated.
  • Step #15 Serve spread warm or cold with French bread or crackers.
