Herbed-grilled Tomatoes Recipe

Ingredients
  • 1/2 tsp sliced fresh parsley, for garnish
  • 4 medium tomatoes, halved
  • 1 tbsp grated fresh Parmesan cheese (optional)
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1 garlic clove, minced
  • 1/8 tsp freshly ground pepper
  • 1 tsp minced fresh basil

Directions
  • Step #1 In a wide, shallow bowl, mix the olive oil & next 5 ingredients (through pepper).
  • Step #2 Add tomatoes, & turn to coat them on all sides.
  • Step #3 Prepare grill.
  • Step #4 Place tomatoes, cut sides down, on the grill rack.
  • Step #5 Brush once with remaining marinade, & then discard marinade.
  • Step #6 Grill about 5-7 mins on each side over medium-high heat or until tomatoes begin to blister, soften, & brown.
  • Step #7 (They can burn easily, so keep an eye on them.
  • Step #8 ) Remove the tomatoes from grill, if desired, & top this with Parmesan cheese, & parsley.
  • Step #9 Serve as soon as possible.
