Coconut Shrimp With Pineapple Salsa Recipe

Ingredients
  •  Shrimp:
  • 28 large shrimp (about 1 1/2 lbs)
  •  Salsa:
  •  Cooking spray
  • 1 c finely sliced fresh pineapple
  • 1/3 c finely sliced red onion
  • 1 tbsp finely sliced seeded jalapeño pepper
  • 1/4 c pineapple preserves
  • 3/4 tsp salt
  • 1/2 to 3/4 tsp ground red pepper
  • 1 1/2 c flaked sweetened coconut
  • 1 1/2 tbsps fresh lime juice
  • 1/4 tsp black pepper
  • 3 large egg whites
  • 1/3 c cornstarch
  • 1/4 c finely sliced fresh cilantro

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 To prepare shrimp, peel & devein shrimp, leaving tails intact.
  • Step #3 Rinse shrimp in cold water; drain on paper towels until dry.
  • Step #4 Combine cornstarch, salt, & red pepper in a shallow dish; stir with a whisk.
  • Step #5 Place the egg whites in a medium bowl, & beat with a mixer at medium-high speed until frothy (about 2 mins).
  • Step #6 Place coconut in a shallow dish.
  • Step #7 Working with one shrimp at a time, dredge in cornstarch mixture.
  • Step #8 Dip in egg white; dredge in coconut, pressing carefully with fingers.
  • Step #9 Place shrimp on a baking sheet coated with cooking spray.
  • Step #10 Repeat the procedure with remaining shrimp, egg white, cornstarch mixture, & coconut.
  • Step #11 Lightly coat shrimp with cooking spray.
  • Step #12 Bake at 400° for 20 mins or until shrimp are done, turning after 10 mins.
  • Step #13 To prepare salsa, mix pineapple & remaining ingredients in a medium bowl; stir this to mix.
