Tomato-and-goat Cheese Crostini Recipe

Ingredients
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 2 (3-oz) logs herb-flavored goat cheese, crumbled
  • 1 tsp olive oil
  • 2 tbsps olive oil
  • 1 (12-oz) French baguette
  • 2 tbsps sliced fresh basil
  • 2 tsps sliced fresh parsley
  • 2 large tomatoes, seeded & sliced
  • 2 garlic cloves, halved

Directions
  • Step #1 Stir together tomatoes, salt, & 1 tsp oil in a bowl; set aside.
  • Step #2 Combine cheese, basil, & pepper in a bowl; stir & set aside.
  • Step #3 Cut bread diagonally into 20 (1/2-inch-thick) slices.
  • Step #4 Brush both sides of slices evenly with 2 tbsps olive oil.
  • Step #5 Grill over med-heat/flame (300° to 350°) 2 mins on each side or until golden.
  • Step #6 Remove from grill.
  • Step #7 Rub cut sides of garlic over bread slices; spread about 1/2 tbsp cheese mixture evenly over each bread slice.
  • Step #8 Top evenly with tomato mixture, & sprinkle evenly with parsley.
