Black-eyed Pea Cakes Recipe

Ingredients
  • 1 large egg
  • 1 small onion, sliced
  • 1 (8-oz) package hush puppy mix with onion
  •  Toppings: sour cream & green tomato relish
  • 2 (15.5-oz) cans black-eyed peas, rinsed, drained, & divided
  • 1 tbsp olive oil
  •  Olive oil
  • 1 tsp hot sauce
  • 1 (8-oz) container chive-and-onion-flavored cream cheese, softened
  • 1/2 tsp salt

Directions
  • Step #1 Sauté onion in 1 tbsp hot oil In a large-ish skillet over medium-high heat until tender.
  • Step #2 Process onion, 1 can of peas, & next 4 ingredients in a mixer or food processor/blender until mixture is smooth, stopping to scrape down sides.
  • Step #3 Stir in hush puppy mix, & carefully fold in remaining can of peas.
  • Step #4 Shape mixture by 2 tbspfuls into 3-inch patties, & place on a wax paper-lined baking sheet.
  • Step #5 Cover up & chill 1 hr.
  • Step #6 Cook patties, adding oil as needed, in 3 tbsps hot oil, in batches, In a large-ish skillet over med-heat/flame for 1 1/2 mins on each side or until patties are golden brown.
  • Step #7 Drain patties on paper towels, & keep them warm.
  • Step #8 Serve with desired toppings.
