Colorfulegetable Fajitas Recipe

Ingredients
  • 2 tbsps vegetable oil
  • 8 (8 inch) flour tortillas
  • 1/2 tsp salt
  • 1 red onion, thinly sliced
  • 1 red bell pepper, seeded & sliced into strips
  • 1/2 c salsa
  • 1 yellow squash, halved & sliced into strips
  • 1 tsp ground cumin
  • 1 c shredded Monterey Jack cheese
  • 1 green bell pepper, seeded & sliced into strips
  • 1 tsp minced garlic
  • 1/4 c sliced fresh cilantro

Directions
  • Step #1 Wrap tortillas in aluminum foil, & place this in oven.
  • Step #2 Turn heat to 350 degrees F (175 degrees C).
  • Step #3 Bake for 15 mins, or until thoroughly heated.
  • Step #4 In a 10 inch skillet, heat oil over medium high heat.
  • Step #5 Add onions, red & green peppers, & garlic; stir this to coat with oil.
  • Step #6 Cover, reduce heat to medium, & cook for 5 mins.
  • Step #7 Stir squash into vegetables.
  • Step #8 Stir in salsa, cumin, & salt.
  • Step #9 Cover, & cook for 5 mins.
  • Step #10 Spoon vegetable mixture evenly down the centers of warm tortillas, & sprinkle with cheese & cilantro.
  • Step #11 Roll up tortillas, & serve.
