Shrimp Marinated In Lemon And Olive Oil Recipe

Ingredients
  • 2 tbsps olive oil
  • 2 tbsps sliced fresh parsley
  • 1 tomato, seeded & cut into 1/4-inch dice
  • 1/8 tsp fresh-ground black pepper
  • 3 1/2 tsps lemon juice
  • 1/4 tsp salt
  • 1 lb large shrimp, in their shells

Directions
  • Step #1 Bring a large pot of salted water to a boil.
  • Step #2 Add the shrimp, cover, & bring back to a boil.
  • Step #3 Continue boiling, until the shrimp are just done, partially covered, 1 to 2 mins.
  • Step #4 Drain.
  • Step #5 Let the shrimp cool & then peel them.
  • Step #6 In a large glass or stainless-steel bowl, tomato, mix the lemon juice with the olive oil, pepper, salt, & parsley.
  • Step #7 Add the shrimp & toss.
  • Step #8 Variations: · Substitute a lb of sea scallops for the shrimp.
  • Step #9 Heat one tbsp of oil In a large-ish nonstick frying pan over moderately high heat until very hot.
  • Step #10 Spice up the scallops with one-eighth tsp salt.
  • Step #11 Put the scallops in the pan & sear until brown on the bottom, one to two mins.
  • Step #12 Turn & brown on the other side until just done, one to two mins longer.
  • Step #13 Remove the scallops & cut them into quarters.
  • Step #14 Toss with the marinade.
  • Step #15 : · Spice up the dish by adding one-quarter tsp dried red-pepper flakes to the marinade.
  • Step #16 : · Use sliced fresh basil instead of the parsley.
  • Step #17 : · For an extra flavor dimension, add a clove of minced garlic to the marinade.
