Golden Rice Crisps Recipe

Ingredients
  • 2 tbsps thinly sliced green onion, including tops
  • 1 tbsp salad oil
  • 1/4 c cornstarch
  • 1/4 c canned coconut milk
  • 1/2 tsp ground dried turmeric
  • 1/2 c rice flour (see notes)
  •  Spice uped fish sauce

Directions
  • Step #1 In a bowl, mix rice flour, cornstarch, & turmeric.
  • Step #2 Add 1 c water (see notes) & the coconut milk, & whisk to mix.
  • Step #3 Stir in green onion.
  • Step #4 Set a 12-inch nonstick frying pan (about 10 inches across bottom) over high heat.
  • Step #5 When pan is hot, add 1 tsp oil & tilt to coat bottom.
  • Step #6 Stir rice flour batter to mix.
  • Step #7 Pour 1/2 c batter into pan all at once & tilt pan to cover entire bottom evenly.
  • Step #8 Cook until crêpe is browned & crisp on the bottom, 3 to 5 mins.
  • Step #9 With a wide spatula, transfer to a 14- by 17-inch baking sheet.
  • Step #10 Repeat to cook 2 more crêpes, adding in a single layer to sheet as cooked (use 2 sheets).
  • Step #11 Bake in a 350° regular or convection oven until crêpes are crisp, 8 to 12 mins.
  • Step #12 Transfer to racks to cool.
  • Step #13 Break off pieces & dip into seasoned fish sauce to eat.
