Mexican Quiche Cups Recipe

Ingredients
  • 2 (10-oz) cans put in the fridged pizza crust
  • 1/8 tsp pepper
  • 1/2 c milk
  •  Salsa (optional)
  • 1/2 tsp ground cumin
  •  Sour cream (optional)
  • 4 (4-inch) chorizo sausage links (about 3/4 lb), sliced
  • 5 large eggs
  • 1 c (4 oz) shredded Mexican four-cheese mix

Directions
  • Step #1 Cook chorizo sausage In a large-ish skillet over med-heat/flame 5 mins or until browned.
  • Step #2 Drain & set aside.
  • Step #3 Roll or pat 1 can pizza crust dough into a 15- x 10-inch rectangle; cut into 6 (5-inch) squares.
  • Step #4 Press squares into a lightly greased 12-count muffin pan, skipping every other muffin c.
  • Step #5 Repeat procedure with remaining 1 can pizza crust dough & another lightly greased 12-count muffin pan.
  • Step #6 Spoon sausage evenly into prepared c; sprinkle evenly with cheese.
  • Step #7 Stir together eggs & next 3 ingredients; pour evenly over cheese.
  • Step #8 Bake at 375° for 20 mins or until golden brown.
  • Step #9 Serve with salsa & sour cream, if desired.
  • Step #10 Mexican Pizza: Unroll 1 can pizza crust dough, & press into a lightly greased 15- x 10-inch jellyroll pan.
  • Step #11 Cook sausage as directed.
  • Step #12 Sprinkle top sausage & cheese evenly over dough; top this with egg mixture & 1 c salsa.
  • Step #13 Bake at 400° for 20 mins or until set.
  • Step #14 Makes 6 to 8 servings.
  • Step #15 Prep: 10 min.
  • Step #16 , Bake: 20 min.
