Greek Shrimp Cocktail With Lemon-yogurt Cream Recipe

Ingredients
  • 1/2 c plain fat-free yogurt
  • 1 c finely sliced seeded cucumber
  • 1 tsp honey
  • 2 tsps fresh lemon juice
  • 1/2 tsp dried oregano
  • 3 c water
  • 1 tsp grated lemon rind
  • 2 tbsps sliced pitted kalamata olives
  • 1/4 c finely sliced red onion
  • 1 lb medium shrimp, peeled & deveined
  • 1 c organic vegetable broth (such as Swanson Certified Organic)
  • 8 lemon wedges
  • 1/3 c (about 1 1/2 oz) reduced-fat crumbled feta
  • 2 tsps extravirgin olive oil
  • 1/4 tsp freshly ground black pepper
  • 3 tbsps finely sliced fresh flat-leaf parsley, divided
  • 1 1/2 tbsps finely sliced fresh mint
  • 2 garlic cloves, minced
  • 1 c finely sliced seeded tomato
  • 1 tbsp red wine vinegar

Directions
  • Step #1 Combine 3 c water & broth in a medium saucepan; bring to a boil.
  • Step #2 Add shrimp; cook 3 mins or until done.
  • Step #3 Drain & rinse under cold water; drain.
  • Step #4 Combine 2 tbsps parsley, mint, & next 4 ingredients (through garlic), stirring with a whisk.
  • Step #5 Stir in cucumber & next 4 ingredients (through olives).
  • Step #6 Add shrimp, tossing carefully to mix.
  • Step #7 Sprinkle top with black pepper.
  • Step #8 Combine yogurt, rind, & honey in a small bowl, juice, stirring with a whisk.
  • Step #9 Serve over shrimp mixture.
  • Step #10 Sprinkle top with remaining 1 tbsp parsley; serve this with lemon wedges.
