Potato Latkes Recipe

Ingredients
  • 1 tsp salt
  • 1/4 c all-purpose flour
  • 1 large egg
  • 1 tsp sliced fresh thyme
  • 1/4 tsp freshly ground black pepper
  • 1 c grated fresh onion (about 2 medium)
  • 1 large egg white
  • 4 c shredded peeled baking potato (about 1 1/2 lbs)
  • 3 tbsps olive oil, divided

Directions
  • Step #1 Combine potato & onion; squeeze moisture from potato mixture over a sieve.
  • Step #2 Lightly spoon the flour into a dry measuring c; level with a knife.
  • Step #3 Combine potato mixture, flour, & next 5 ingredients (through egg white) In a large-ish bowl.
  • Step #4 Divide mixture into 12 equal portions; squeeze out any remaining liquid.
  • Step #5 Shape each into a 1/4-inch-thick patty.
  • Step #6 Heat 1 1/2 tbsps oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #7 Add 6 patties; cook 5 mins on each side or until golden.
  • Step #8 Repeat procedure with remaining oil & patties.
