Black Bean Dip With Tortilla Chips Recipe

Ingredients
  • 1 garlic clove, minced
  • 6 (10-inch) flour tortillas, each cut into 8 wedges
  • 2 tbsps balsamic vinegar
  •  Cooking spray
  • 1/4 tsp black pepper
  • 2 (15-oz) cans black beans, drained
  • 1 jalapeño pepper, seeded & sliced
  • 2 tbsps lime juice
  • 1/2 tsp ground allspice
  • 3 tbsps finely sliced green onions
  • 1/2 tsp ground cumin
  •  Chopped red bell pepper (optional)
  • 1 red bell pepper
  • 2 tbsps hot sauce
  • 1/4 tsp salt
  • 3/4 c minced fresh cilantro (about 1 bunch)

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut the bell pepper in half lengthwise, discarding seeds & membranes.
  • Step #3 Place the bell pepper halves, skin sides up, on a foil wrap-lined baking sheet, & flatten with hand.
  • Step #4 Broil for 5 mins or until blackened.
  • Step #5 Place the bell pepper in a zip-top plastic bag, & seal.
  • Step #6 Let stand for 5 mins, & peel.
  • Step #7 Place the bell pepper & the next 12 ingredients (bell pepper through garlic) in a food processor/blender, & process until smooth.
  • Step #8 Spoon into a bowl, & garnish with sliced bell pepper, if desired.
  • Step #9 Preheat oven to 400°.
  • Step #10 Arrange the tortilla wedges in a single layer on a baking sheet coated with cooking spray.
  • Step #11 Bake at 400° for 5 mins or until golden.
  • Step #12 Serve the dip with chips.
