Crispy "fried" Onion Rings Recipe

Ingredients
  • 1 egg white
  • 1/2 c all-purpose flour
  • 2 tbsps olive oil
  •  Vegetable cooking spray
  • 1/2 tsp coarse kosher salt
  • 1/2 c low-fat buttermilk
  • 1 large sweet onion

Directions
  • Step #1 Cut onion into 1/4-inch-thick slices, & separate into rings.
  • Step #2 Select largest 12 rings, reserving remaining onion slices for another use.
  • Step #3 Whisk together buttermilk & egg white in a small bowl until mixed.
  • Step #4 Dredge onion rings in flour; dip into buttermilk mixture, coating well.
  • Step #5 Dredge again in flour, & place on a baking sheet.
  • Step #6 Heat 2 tsp.
  • Step #7 oil in a 10-inch skillet over medium-high heat.
  • Step #8 Tilt pan to coat bottom of skillet.
  • Step #9 Add 4 onion rings to skillet, & cook 1 min on each side or until golden.
  • Step #10 Wipe skillet clean.
  • Step #11 Repeat procedure twice with remaining onion rings & oil.
  • Step #12 Place fried onion rings on an aluminum foil wrap-lined baking sheet coated with cooking spray.
  • Step #13 Bake at 400° for 3 mins.
  • Step #14 Turn onion rings, & bake 3 more mins.
  • Step #15 Remove from oven, & sprinkle with salt.
  • Step #16 Serve as soon as possible.
