Shrimp Fritters Recipe

Ingredients
  • 1 c all-purpose flour
  • 1 lb unpeeled, medium-size fresh shrimp
  • 4 garlic cloves, minced
  •  Vegetable oil
  • 6 c water
  • 1 medium onion, minced
  • 1 tsp pepper
  • 1/4 c light or dark beer
  • 1 tsp salt
  • 1 jalapeño pepper, seeded & minced
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp dried thyme

Directions
  • Step #1 Bring 6 c water to a boil; add shrimp, & cook 3 to 5 mins or just until shrimp turn pink.
  • Step #2 Drain & rinse with cold water.
  • Step #3 Chill.
  • Step #4 Peel shrimp, & devein, if desired.
  • Step #5 Coarsely chop shrimp.
  • Step #6 Beat flour & next 5 ingredients at medium speed with an electric mixer until smooth.
  • Step #7 Stir in shrimp, onion, & next 3 ingredients.
  • Step #8 Cover up & chill 2 hrs.
  • Step #9 Pour oil to a depth of 5 inches into a Dutch oven; heat to 375°.
  • Step #10 Drop batter by rounded tbspfuls, & fry, in batches, 5 mins or until golden.
  • Step #11 Drain fritters on paper towels.
  • Step #12 Note: For testing purposes only, we used Honey Brown beer.
  • Step #13 Pineapple Fritters: Substitute 1 (8-oz) can pineapple chunks, drained & coarsely sliced, for shrimp.
  • Step #14 Omit onion, jalapeño, garlic, & thyme.
  • Step #15 Proceed as directed.
