Ingredients
  • 1/4 c sliced green bell pepper
  • 2 tbsps olive oil
  • 2 cloves garlic, minced
  • 2 tbsps grated Parmesan cheese
  • 1/2 c minced onion
  • 1/4 tsp paprika
  • 2 tsps dried parsley
  • 1 tbsp butter
  • 1/2 tsp dried oregano
  • 1 c dried bread crumbs
  • 2 tbsps olive oil
  • 24 large clams
  • 4 slices bacon

Directions
  • Step #1 In a small skillet, cook bacon until crisp over med-heat/flame.
  • Step #2 Crumble, & set aside.
  • Step #3 Wash clams.
  • Step #4 Place on a baking sheet.
  • Step #5 Heat in a preheated 350 degree F (175 degree C) oven for 1 to 2 mins, or until clams open.
  • Step #6 Discard any that do not open.
  • Step #7 Remove meat from shells.
  • Step #8 Chop, & set aside.
  • Step #9 Add 2 tbsps oil & butter to a small skillet, & place pan over med-heat/flame.
  • Step #10 Add onion, pepper, & garlic; saute until tender.
  • Step #11 Remove from heat, & cool.
  • Step #12 In a medium bowl, cheese, bacon, oregano, mix bread crumbs, sauteed vegetables, & sliced clams.
  • Step #13 Mix well.
  • Step #14 Fill clam shells with mixture, & place on baking sheet.
  • Step #15 Sprinkle top with parsley & paprika.
  • Step #16 Drizzle with olive oil.
  • Step #17 Bake at 450 degrees F (230 degrees C) for 7 mins.
  • Step #18 Serve.
