Feta-chile Spread Recipe

Ingredients
  • 1/2 c plain fat-free yogurt
  • 2 tbsps fresh lemon juice
  • 2 c (8 oz) crumbled feta cheese
  • 2 Anaheim or poblano chiles
  • 4 pitas, each cut into 8 wedges

Directions
  • Step #1 Preheat broiler.
  • Step #2 Place chiles on a foil wrap-lined baking sheet, & broil 7 mins or until lightly blackened, turning after 3 1/2 mins.
  • Step #3 Peel & cut a lengthwise slit in each roasted chile; discard seeds & stems.
  • Step #4 Chop roasted chiles.
  • Step #5 Place cheese, yogurt, & juice in a food processor/blender; process until smooth.
  • Step #6 Spoon cheese mixture into a medium bowl, & stir in the sliced chiles.
  • Step #7 Chill at least 1 hr before serving with pita wedges.
