Lemon-basil Shrimp Salad Recipe

Ingredients
  • 3 lbs unpeeled, cooked large shrimp
  • 16 c salad greens
  • 8 Parmesan Baskets (optional)
  •  Fresh Lemon Vinaigrette
  • 1/2 c sliced fresh basil
  •  Lemon-Basil Marinade
  • 1 large red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

Directions
  • Step #1 Peel shrimp, & devein, if desired.
  • Step #2 Place shrimp & next 4 ingredients In a large-ish zip-top plastic freezer bag.
  • Step #3 Seal & chill 8 hrs or up to 24 hrs, turning bag every once in awhile.
  • Step #4 Stir in basil 1 hr before serving.
  • Step #5 Drain & discard marinade just before serving.
  • Step #6 Divide greens evenly between Parmesan Baskets or serving bowls; arrange drained shrimp mixture evenly over lettuce.
  • Step #7 Serve with Fresh Lemon Vinaigrette.
