Coffee Liqueurce Cream Pie Recipe

Ingredients
  • 1 pint vanilla ice cream, softened
  • 2 tbsps coffee-flavored liqueur
  • 1 pint chocolate ice cream, softened
  • 3 oz semisweet chocolate, sliced
  • 3/4 c whipped cream, beaten stiff
  • 2 tbsps coffee-flavored liqueur
  • 1/2 c unsalted butter, melted
  • 6 tbsps coffee-flavored liqueur
  • 1 tsp instant espresso coffee powder
  • 1 1/8 c chocolate wafer cookies, crushed
  • 1 tbsp unsalted butter

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 In a medium bowl, stir this together the cookie crumbs & melted butter.
  • Step #3 Press mixture evenly onto bottom & sides of a 9 inch pie pan.
  • Step #4 Bake crust in oven for 10 mins.
  • Step #5 Remove from oven & cool completely.
  • Step #6 In a small saucepan, heat 6 tbsps of liqueur & espresso powder over low heat/flame.
  • Step #7 Heat until warm & powder is dissolved.
  • Step #8 Stir in chocolate & 1 tbsp of butter until mixture is melted & smooth.
  • Step #9 Allow to cool completely.
  • Step #10 Place vanilla ice cream into mixing bowl with 2 tbsps of coffee liqueur.
  • Step #11 Using an electric mixer, mix together on lowish speed.
  • Step #12 Spread over bottom of cooled crust & freeze until firm.
  • Step #13 Then spread cooled chocolate mixture over frozen ice cream.
  • Step #14 Freeze pie until firm.
  • Step #15 Blend together chocolate ice cream & 2 tbsps liqueur.
  • Step #16 Spread chocolate ice cream mixture over frozen chocolate sauce in pie.
  • Step #17 Freeze until firm.
  • Step #18 Serve pie with a decorative piped border of whipped cream around the inside edge of the pie.
