Duck And Oyster Gumbo Recipe

Ingredients
  • 2 green bell peppers, sliced
  • 1/4 c sliced green onions
  • 1 c all-purpose flour
  • 5 to 6 c sliced duck meat
  • 8 c Duck Stock
  • 1/2 c vegetable oil
  • 1 tbsp sliced fresh thyme
  • 1 tbsp fresh oregano
  • 3 garlic cloves, minced
  • 1/2 c sliced fresh basil
  • 2 celery ribs, sliced
  • 2 tsps hot sauce
  • 1 1/4 tsps salt
  • 1/2 tsp ground red pepper
  •  Hot cooked rice
  • 1 tbsp molasses
  • 2 medium onions, sliced
  • 2 tbsps tomato paste
  • 1/2 tsp freshly ground pepper
  • 1 (12-oz) container oysters, drained

Directions
  • Step #1 Cook oil & flour In a large-ish Dutch oven over medium-low heat, whisking constantly, until roux is chocolate colored (about 35 to 40 mins).
  • Step #2 Stir in celery, onion, & bell pepper; cook 7 mins, stirring often.
  • Step #3 Add garlic; cook 2 mins.
  • Step #4 Gradually stir in the Duck Stock & next 8 ingredients; bring to a boil.
  • Step #5 Reduce heat, & let simmer, uncovered, 1 hr, stirring every once in awhile.
  • Step #6 Add duck meat; simmer 15 mins.
  • Step #7 Remove from heat; stir in the oysters & fresh basil.
  • Step #8 Let stand 5 mins.
  • Step #9 Serve over hot rice.
  • Step #10 Sprinkle top with green onions.
