Chicken Chimichangas With Green Sauce Recipe

Ingredients
  • 2 (4 oz) cans sliced green chiles
  • 1 lb shredded cooked chicken meat
  • 1 (8 oz) package cream cheese
  • 1 (8 oz) package shredded Monterey Jack cheese
  • 2 tbsps fresh lime juice
  • 1 (8 oz) container sour cream
  • 1 jalapeno pepper, seeded & sliced
  • 2 (10.5 oz) cans condensed cream of chicken soup
  • 8 (10 inch) flour tortillas
  • 1/2 (1 oz) package taco seasoning
  • 1 c sliced green onion
  • 5 pitted green olives
  • 1/2 c vegetable oil
  • 1 (8 oz) package shredded sharp Cheddar cheese

Directions
  • Step #1 Pour the cream of chicken soup into a mixer along with the green chiles, jalapeno, olives, & lime juice.
  • Step #2 Puree until smooth, then pour this into a saucepan, & warm over medium-low heat while proceeding with the recipe.
  • Step #3 In a large bowl, stir this together the cream cheese, Monterey Jack cheese, & taco seasoning until well mixed.
  • Step #4 Fold in the chicken.
  • Step #5 Evenly divide mixture among the 8 tortillas.
  • Step #6 Fold each tortilla into a rectanglular packet around the filling.
  • Step #7 Heat the vegetable oil in a large skillet over medium-high heat.
  • Step #8 Fry 4 chimichangas at a time until golden brown, then drain on a plate lined with paper towels.
  • Step #9 To serve, place a chimichanga on a plate, & ladle the warm sauce overtop.
  • Step #10 Sprinkle top with Cheddar cheese & green onions.
  • Step #11 Finish with a dollop of sour cream.
