Ginger Beef Mini Skewers Recipe

Ingredients
  •  Salt & pepper
  • 2 thinly sliced spring onions
  • 1 tbsp thinly sliced ginger, plus 1 tbsp finely grated ginger
  • 1/2 head garlic, cloves peeled & thinly sliced, plus 1 tbsp finely grated garlic
  • 1/4 c soy sauce
  • 1/2 c extra-virgin olive oil
  • 3/4 lb beef tenderloin
  • 4 to 6 chives, thinly sliced
  • 2 tbsps seasoned rice vinegar

Directions
  • Step #1 Slice the tenderloin into 1/2-inch-thick slices & lightly lb each with the flat side of a meat lber until about 1/4 inch thick.
  • Step #2 Each piece should be rectangular (about 1 1/2 by 2 1/2 inches); trim off any raggedy bits for another use, such as a stir-fry.
  • Step #3 Stir together sliced ginger, spring onions, sliced garlic, & olive oil in a bowl.
  • Step #4 Add beef, cover, toss to coat, & marinate in the refrigerator at least 8 hrs.
  • Step #5 Prepare a charcoal or gas grill for high heat (you can hold your hand at grill level only 2 to 3 seconds).
  • Step #6 Meanwhile, whisk together grated ginger, grated garlic, rice vinegar, & soy sauce in a small bowl.
  • Step #7 Thread beef slices onto soaked skewers (see notes) & season this with salt & pepper.
  • Step #8 Brush the grill with vegetable oil.
  • Step #9 If using coals, mound to one side to reach about 4 inches below the grill.
  • Step #10 Lay skewers on grill; close lid on gas grill.
  • Step #11 Grill skewers just until seared, turning once, about 30 seconds per side.
  • Step #12 Serve skewers drizzled with ginger sauce & garnished with chives.
