Salmon Skewers With Romesco Sauce Recipe

Ingredients
  • 2 lbs salmon fillets, skinned & cut into 48 cubes
  • 2 tbsps olive oil
  • 1/4 c slivered almonds, toasted
  • 1 tsp paprika
  • 1 c canned fire-roasted sliced tomatoes (such as Muir Glen), drained
  • 2 (7 1/2-oz) jars roasted red bell peppers, drained
  • 1 (1-oz) slice white bread
  • 2 tsps crushed red pepper
  • 3 garlic cloves, sliced
  •  Romesco Sauce:
  • 3/4 tsp salt
  • 1 tbsp red wine vinegar
  •  Cooking spray
  •  Salmon:
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/4 tsp salt

Directions
  • Step #1 Preheat broiler.
  • Step #2 To prepare romesco sauce, place first 10 ingredients in a food processor/blender, & process until smooth.
  • Step #3 To prepare salmon, sprinkle salmon with paprika, oregano, & 1/4 tsp salt.
  • Step #4 Thread 2 salmon pieces onto each of 24 (6-inch) skewers.
  • Step #5 Arrange on a broiler pan coated with cooking spray.
  • Step #6 Lightly coat salmon skewers with cooking spray.
  • Step #7 Broil 5 mins or until fish flakes easily when tested with a fork or until desired degree of doneness.
  • Step #8 Serve with sauce.
