Ingredients
2 lbs salmon fillets, skinned & cut into 48 cubes
2 tbsps olive oil
1/4 c slivered almonds, toasted
1 tsp paprika
1 c canned fire-roasted sliced tomatoes (such as Muir Glen), drained
2 (7 1/2-oz) jars roasted red bell peppers, drained
1 (1-oz) slice white bread
2 tsps crushed red pepper
3 garlic cloves, sliced
Romesco Sauce:
3/4 tsp salt
1 tbsp red wine vinegar
Cooking spray
Salmon:
1 tsp dried oregano
1 tsp ground cumin
1/4 tsp salt
Directions
Step #1 Preheat broiler.
Step #2 To prepare romesco sauce, place first 10 ingredients in a food processor/blender, & process until smooth.
Step #3 To prepare salmon, sprinkle salmon with paprika, oregano, & 1/4 tsp salt.
Step #4 Thread 2 salmon pieces onto each of 24 (6-inch) skewers.
Step #5 Arrange on a broiler pan coated with cooking spray.
Step #6 Lightly coat salmon skewers with cooking spray.
Step #7 Broil 5 mins or until fish flakes easily when tested with a fork or until desired degree of doneness.
Step #8 Serve with sauce.
